Roy’s Light Apple Cinnamon Greek Yogurt Pancakes

Makes 6 pancakes 1 Bite / Blue Point per pancake

Ingredients

· 1 apple, peeled and cut into small dice

· 3/4 tsp cinnamon, divided

· 1 Tbsp + 1/4 tsp sweetener, divided

· 1/2 cup flour

· 1 tsp baking soda

· Pinch of salt

· 1/4 cup nonfat Greek yogurt

· 1/4 cup unsweetened apple sauce

· 1 egg (or 2 egg whites)

· 1/4 tsp vanilla extract

· 1/4 – 1/3 cup water (to thin out batter)

· Cooking spray


Directions

1. Mix apple pieces with 1/4 tsp each cinnamon and sweetener. Set aside.


2. Whisk flour, 1/2 tsp cinnamon, 1 Tbsp sweetener, baking soda, and salt in a medium bowl to blend.


3. Add remaining ingredients (EXCEPT APPLES!) and mix until it just comes together.


4. Heat pan or griddle on medium heat and spray with cooking spray.


5. Add about 1/4 cup of batter to the pan/griddle to make 6 pancakes. Sprinkle apple pieces onto the cooking pancakes.


6. Once browned (about 3 minutes), flip the pancakes and cook about 2 minutes more. Serve with sugar-free syrup or any low-point option!




Notes

· You can add the apple pieces to the batter, but there is less consistency in how much each pancake gets.

· To increase the apple-cinnamon flavor, you can create a quick Apple-Cinnamon Syrup for 2 and it will add no bites or points! In a small saucepan, heat 1/2 cup unsweetened applesauce, 2 Tbsp sugar-free maple syrup or sugar replacement, and 1 tsp cinnamon over medium heat until enough liquid evaporates to give you a thick, syrup-like consistency, about 5 minutes. If you have any leftover apple pieces from making the pancakes, you can add those in as well. To make it more of a caramel-apple flavor, use brown sugar replacement.
