Roy’s Light and Soft Apple Cookies

Ingredients

· 2 cups flour (see notes)

· 1/2 cup sugar replacement

· 1 1/2 tsp baking powder

· 1/2 tsp cinnamon (see notes)

· 1/2 tsp salt

· 2 eggs, room temperature

· 1/2 cup unsweetened applesauce

· 2 apples, peeled and cut into 1/2” pieces

Topping (see notes)

· 1 Tbsp confectioners’ sugar (see notes)

· 1/2 tsp cinnamon


Directions

1. Preheat oven to 350°F. Line a baking sheet with parchment paper or coat with cooking spray.


2. In a large bowl, whisk together the flour, sugar replacement, baking powder, cinnamon, and salt.


3. In a small bowl, whisk the eggs to a uniform color, then whisk in the applesauce.


4. Pour the egg mixture into the flour mixture and mix with a spatula or spoon to form a thick dough. Add in the diced apple and mix to combine the apple pieces well into the dough.


5. Scoop dough onto the baking sheets in mounds using a 1/4-cup measure or a number 14 scoop, keeping about an inch between each mound.


6. Bake 20-25 minutes, until firm in the center and browned on the bottom. Remove from the oven and cool for at least half an hour.


7. If using, combine the confectioners’ sugar and cinnamon and dust the tops of the cookies.


8. Store cooled cookies in an airtight container to keep them soft up to 5 days.


Notes

· Need to increase your protein? Replace up to 1/2 cup of the flour with vanilla protein powder.

· You can use apple pie spice in place of cinnamon.

· The topping is optional, but the nutrition facts were calculated using it.

· Powdered sugar replacement is also an option, but the regular doesn’t alter the bites or points much.

· If using a measuring cup to scoop out the dough, coat it with cooking spray.
