Ingredients
· 1 1/2 pounds boneless, skinless chicken breasts
· 6 cups chicken broth
· 2 (15-ounce) cans Great Northern or cannellini beans, rinsed and drained
· 2 cups tightly packed baby spinach
· 1/4 cup chopped basil
· 16 grams (about 3 Tbsp) freshly grated parmesan
· 1 Tbsp olive oil
· salt & pepper to taste
Directions
1. Put the chicken in a large pot and cover with the broth. Bring to a boil over medium-high heat, reduce the heat to medium-low, and simmer 10-15 minutes or until the chicken registers 165°F in the thickest part of the breast.
2. Transfer the chicken to a cutting board. Skim the surface if any foam has appeared. Shred the meat with two forks and add it back to the pot with the beans, spinach, and basil.
3. Cook until the spinach and basil wilt, about 2-3 minutes.
4. Add the parmesan and olive oil and stir through. Taste for seasoning and add salt and pepper to your taste.
