Roy’s Light (& Adaptable) Waffles

Makes 4 Belgian Waffles 4 Better Balance Bites/Blue Points

Ingredients

  • 1 cup almond milk, room temperature

  • 1 cup nonfat plain Greek yogurt, room temperature

  • 2 eggs, room temperature

  • 3 Tbsp unsweetened applesauce

  • 1 tsp vanilla

  • 1 1/2 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • Cooking spray


Directions

  1. Combine almond milk, yogurt, eggs, applesauce, and vanilla and whisk well to combine.

  2. Combine flour, baking powder, baking soda, cinnamon, and salt in a large bowl and whisk together well.

  3. Form a well in the center of the dry ingredients and add the wet mixture to the well. Gently fold the wet into the dry. Don't worry if there are a few lumps. Set aside for 10 minutes.

  4. Heat the waffle iron. When the iron is hot, spray lightly with cooking spray. Pour batter into the center of the waffle iron based on manufacturer recommendations for amount. (For my Belgian waffle iron, I use about 3/4 cup.) Cook until a golden-brown crust forms. If you prefer your waffles with a little more texture, you may want to leave it in the waffle iron an extra 2 minutes. Repeat until all the batter is used. Serve warm.


Notes

· If not serving immediately, keep the waffles warm on a cooling rack set over a baking sheet in an oven that was heated to 200°F, then turned off so as not to dry out the waffles.

· You can change up the flavor as you like. Here are a few ways I do that:

o Lemon-Blueberry – Add the zest and juice of one lemon to the wet ingredients and

add 1/2 cup of blueberries after combining the batter and before resting it. Be aware

that there may be some hissing, squealing noises as the heated fruit releases steam.

(Feel free to change the zest, juice, and fruit flavors as desired.)

o Chocolate – Replace 1/3 cup of the flour for cocoa powder (to make this easier,

measure out the 1 1/2 cups of flour, then remove 1/3 cup of it), add 3 Tbsp of sugar

replacement, and (if desired) add 1/3 cup of sugar-free chocolate chips, chopped

strawberries, or diced cherries. Be aware that there may be some hissing, squealing

noises as the heated fruit releases steam.

o Protein Waffles – Replace 1/2 cup of flour for your favorite protein powder.

o Apple-Cinnamon – Double the cinnamon and shred 1 medium apple (peeled or not)

into the batter before resting it.

o Ginger-Pear – Add half the cinnamon and 1 tsp ground ginger then shred 1 medium

pear into the batter before resting it.

o Savory – Swap out the cinnamon for your favorite dried herb and double the salt.

Add some savory ingredients, such as chopped fresh spinach or mushrooms, low-

bite/point deli meat, fat-free cheese, etc., about 1 cup in total.
