Roy’s Light Eggnog

Yield: 6 (1 cup) servings 2 Better Balance Bites/Blue Points (see notes)

Ingredients

· 4 cups almond milk (see notes)

· 1 1/2 cups pasteurized egg product (see notes)

· 1 Tbsp rum extract (see notes)

· 2 (1 oz) packages instant sugar-free vanilla pudding mix

· 1/4 cup sugar replacement

· 1 tsp cinnamon, or to taste

· 1 1/2 tsp nutmeg, or to taste


Directions

1. Put all the ingredients into a blender and blend for 1 minute.


2. Refrigerate at least 2 hours before serving.


Notes

· “Regular” eggnog comes to about 8 bites/points for 1/2 cup. You could go with that serving size and this would then serve 12 at 1 bite/point a serving.

· If the eggnog gets too thick for your liking as it chills, add a little more almond milk. You can add up to 2 cups more without affecting the bites/points, though the more you add, the more diluted the flavor will become.

· You can adjust the rum extract and add some vanilla to equal the required tablespoon, but the rum extract truly does enhance the eggnog flavor.

· Use this in place of milk in your pancakes, waffles, cakes, etc. It’s also great in coffee!
